Highland Park 12 Años is made with barley from its own harvest, malted with peat and matured in sherry barrels. A whisky with sweet and spicy notes of heather and honey and a subtle smoky touch.
Highland Park is the northernmost distillery in Scotland and one of the most remote. The distillery is located in the town of Kirkwall on the Scottish island of Orkney in the Islands region of Scotland. Highland Park, was founded in 1798, allegedly by Magnus Eunso and the name of this, Highland Park, although it may seem to be related to the geographical region of the Scottish Highlands, is not so, the name of the distillery refers to an elevated area called High Park, where the distillery was built.
Highland Park is one of the few distilleries that malts its own barley, using Hobbister Moor peat. The peat is mixed with heather for the malting process. The malt is peat up to about 20 PPM and mixed with undisturbed malt. Providing the whisky with a subtle smoke, well below the levels of peat offered by, for example, the Islay.
The character of Highland Park is one of the most balanced in Scotland, according to journalist and writer Michael James Jackson, The best all-rounder of malt whiskies. The distillery stands out for the balance between notes of honey, citrus, heather and soft smoked.

Breeding: The twelve-year maturation of this whisky takes place in barrels of sherry, first use (about 20%), second and third use.
Nose: Floral notes of heather, honey candies and smoked.
Mouth: Light notes of peat and smoked mixed with notes of heather and honey.
Final: Medium-high persistence, with light smoke and honey.
