After a process of double distillate, the tequila ages in American white oak barrels for sixteen months, impregnating the tequila with notes of oak, vanilla and roasted coffee.
Calle 23 is located in Guadalajara, Jalisco, Mexico. To make tequila, the distillery uses only Blue Agave, harvested in the highlands of 'Los Altos de Jalisco', in plantations located between the city of Tepatitlan and Arandas. Agave grows in a climate and land conducive to its development, in fertile soils with a high concentration of minerals and in a hot and dry climate in summer and very rainy in winter.
The Blue Agave, or Weber, is collected at the time of maximum maturity of the plant, when it is between seven and nine years old. The Jimadores, with the help of a Coa, clean the plant, leaving only with the heart.
After the collection of the hearts or pineapples, they pass to ferment fifteen hours before going through a quiet double distillation, in which a distillate with alcohol volume between 52 and 54% is obtained.
At this time the tequila is well reduced to 40% vol. and bottling or starting its aging process, which will define whether it is rested or aged.
