El Dominio del Águila winery is located in La Aguilera, Burgos. Those who manage the winery are Isabel Rodero and Jorge Monzón, the latter was trained at the universities of Bordeaux and Burgundy, then was working for a while at the winery Domaine De La Romanée-Conti, after two years, moved to Spain to start a project with the group Vega Sicília then Arzuaga as technical director, and finally, today, at the winery Dominio del Águila.
The vineyards have an average age of between 35 and 60 years and are situated at 900 metres above sea level. It is elaborated mainly with Tempranillo, contributing a touch of white of the country, Garnacha and Bobal.
Harvested by hand, without destemming the bunches, the grapes are stepped on with their feet and then aged for 19 months in French oak barrels.
Scored in the 2019 vintage with 94 Parker points, it is a wine that we recommend to pair with beef, stews, sheep and rabbit cheeses.
