The production process and its name is strongly controlled by official regulations. This drink is made from the blue variety Weber agave, a plant that matures for 7 years, and can only be harvested in the state of Jalisco, or certain areas of Guanajuato, Nayarit, Tamaulipas or Michoacán. Subsequently, it undergoes a process of grinding, cooking and extraction of its juice which is then fermented and distilled; until it comes to rest, the duration of which is what will cause it to be classified differently, since the non-aged tequila is known as white . For this reason, in our collection you will find both aged (from 1 to 5 years of rest with a generally stronger flavor) and rested (aged for 6 to 9 months with a more spicy flavor); those that are considered more select.
From the state of Guanajuato comes the Corralejo Reposado Tequila , from the Tequilera Corralejo , one of the most internationally recognized. This drink is distinguished by its aging in three types of American oak barrels, Mexican oak and French oak strictly in this order, so that the resulting flavor is clear, softly fruity and citric.
We select the Tequila 1800 in its añejo and reposado varieties, from the tequila company of the same name that produces this liquor since 1800 in the state of Jalisco. This drink is produced from agave between 8 and 12 years old that grows in volcanic soil. It is matured in the case of rested in American and French oak barrels, which conclude in a caramelized, spicy and smoked flavor. In its aged variety, it matures for more than 14 months in French oak barrels, giving it a sweet caramel flavor, but with character.
One of the most exclusive tequilas that you can find in La Llar del Vi , comes from Atotonilco, state of Guajanato, Patron . This drink is made by hand from the process of extraction of the pineapple from the Agave, the aging, to the process of making the bottles, created and molded by hand by artisans, using recycled glass. Reposado Pattern is aged for a minimum of two months in oak barrels, whose final flavor is citric, slightly sweet and with a final tinge of honey and vanilla. For more than 12 months in white oak barrels, Añejo Pattern ages, whose final flavor concludes in oak, vanilla, honey and raisins.
